Yum! A Recipe. 'Chilli Chicken Noodles'

RECIPE: Chilli Chicken Noodles

MAKES: 4

INGREDIENTS:
600 g hokkien noodles
500 g chicken thigh fillets, sliced thinly
1/2 cup sweet chilli sauce
2 tbsp ketjap manis (sweet soy sauce)
1/4 cup spring onions freshly chopped

METHOD:
Rinse noodles under hot water; drain. Transfer to large bowl;
separate noodles with fork.
Cook chicken and sweet chilli sauce in large heated oiled frying pan,
stirring, until chicken is browned well and cooked through. Add
noodles, ketjap manis and 1/2 cup (125 ml) water; cook, stirring,
until heated through.
Remove pan from heat; toss through chopped spring onion.

RECIPE: Minced Chicken Patties

INGREDIENTS:
500 g minced chicken
1 tbsp melted butter
2 egg yolks
40 g cheese
1/2 cup milk
1/2 cup breadcrumbs
salt
oil or butter for shallow frying

METHOD:
Place chicken, melted butter, egg yolks, cheese, milk and salt in
large bowl. Mix well.
With clean hands roll mixture into balls, flatten slightly and coat
with breadcrumbs.
Heat oil or butter in pan. Carefully brown both sides of the
patties. Drain on paper towel.
Serve with sour cream and cooked mushrooms.

RECIPE: Spicy Plum-Glazed Chicken Drumsticks

PREHEAT: 220°C

MAKES: 4

INGREDIENTS:
8 chicken drumsticks
1 cup oriental plum sauce
2 tbsp soy sauce
2 tbsp sweet chilli sauce
pkt french onion soup mix (35g)

METHOD:
Combine all ingredients in a large bowl.
Place the chicken mixture in a large oiled non-stick baking dish.
Bake, uncovered, in hot oven for 30 minutes or
until browned and cooked through, turning chicken
occasionally.
